Island Brine is owner-operated and shaped by over a decade of raw bar experience. We believe the best raw bars feel generous, unforced, and right at home in the setting around them — fresh shellfish on ice, served with care and without unnecessary fuss. Fully insured and licensed by the Nantucket Health Department, Island Brine is built to bring a calm, polished presence to gatherings of all kinds.

III STAGES
Stage I · The Signal

Send word.

Tell us the date, the headcount, and the feel of it — a sunset welcome, a sit-down dinner, a quiet afternoon on the boat.

Stage II · The Provision

We handle it.

One short conversation to set the menu. We bring the ice, the shellfish, the tools, the table. Setup and breakdown are ours.

Stage III · The Service

We shuck.

We arrive early, shuck to order, and leave the space cleaner than we found it. Your guests taste the ocean. You enjoy your own party.
